Happy National Chocolate Chip Cookie Day!
In celebration of the sweet occasion, PFC nutritionist, Jessica Janc whipped up a batch of her favorite, better-for-you chocolate chip cookies!
INGREDIENTS
1 ½ cups flour (whole wheat can also be used)
¾ teaspoon baking soda
½ teaspoon salt
½ cup firmly packed sucanat- (lower glycemic index option for brown sugar)
¼ cup Truvia
2 tablespoons liquid butter buds
¾ teaspoon vanilla
1 egg white
¼ cup low fat sour cream
½ cup mini chocolate chips
Preheat oven to 350 degrees. Spray two cookie sheets with non stick cooking spray. In a small bowl stir together flour, baking soda, and salt. In a mixing bowl with an electric mixer cream the brown sugar, Truvia and butter buds until smooth. Beat in egg white, vanilla and sour cream. Stir in flour mixture and chocolate chips.
Drop the dough by rounded teaspoonfuls about 2 inches a part ob cookies sheets. Bake 10 minutes.
