A Healthy Take on Taco Tuesday

We absolutely love it when PFC Fitness Camp alumni take what they’ve learned in all of their cooking and nutrition classes and come back to us with healthy, PFC approved recipes of their own! This healthy take on Taco Tuesday is from a familiar face to the PFC blog, Kerri Cerundolo.

Ingredients
1 lb. Ground Chicken
1 Tsp. Granulated Garlic
1 Packet Taco Seasoning (I like Simply Organic Southwest or Spicy flavor)
3 Small Tomatoes, Diced
1/3 C. Red Onion, Diced
2 T. Jalapeños, Diced
1/2 Lemon, Juiced
1 Head Shredded Romain
1/4 C. Shredded Mozzarella
Fresh Cilantro, Chopped
2 Corn Tortillas
Avocado (optional)

Directions
Over medium heat, sauté ground chicken with packet of taco seasoning and granulated garlic.
While that cooks, prepare your salsa fresca. Combine diced tomatoes, red onion, jalapeños and lemon juice. Then set aside.
Crisp up two corn tortillas in a pan over high heat. Spray both sides with cooking spray flipping consisently until desired crisp.
Layer two tortillas with meat and garnish with lettuce cheese, salsa, more jalapeños, cilantro and avocado!
