Healthy Summer Popsicles with Jessica!

Nothing says Summer better than enjoying a cold treat pool side, right? Well what if we told you that pool side treat could be healthy and delicious? Look no further! Today we’re bringing you a healthy popsicle recipe from our PFC nutritionist Jessica Janc!

There are only 5 ingredients in this recipe, and it’s super simple to make. If you don’t love strawberries, try swapping in your favorite fruit! We like berries because they have a lower sugar content and won’t spike your blood sugar as much as some other fruits. The lower sugar fruit plus the added protein in the greek yogurt make these popsicles an A+ choice.

Healthy Strawberry-Creamy Recipe:

  • 1 C lightly chopped strawberries
  • 2 Tbs agave nectar
  • 1 tsp Vanilla Extract
  • 2/3 tsp Lemon Juice
  • 1 C Plain Greek Yogurt

Mix the first four ingredients together in a blender or food processor. Blend until mixed, but strawberries are still a little chunky.

Add the mixture to your 1 cup Plain Greek Yogurt. Stir together.

Spoon the mixture into your popsicle molds (recipe makes 8 popsicles). Place into the freezer for 2-3 hours. Enjoy!
