Happy St. Patty’s Day!
Rather than the typical corned beef tradition, we’re taking a Southern California approach to St. Patrick’s Day using the nutrient-dense and oh-so-green California Avocado. This Good for you Guacamole uses vitamin C packed zucchini, cilantro to lower blood sugar and avocado for essential fatty acids. Between the beer, corned beef and cabbage, slide this tasty side in with raw veggies or whole grain chips!
INGREDIENTS
1 large zucchini, cut into 1/2-inch cubes
1 tablespoon grapeseed oil
1 large ripe avocado, cubed
1/4 cup coarsely chopped fresh cilantro
1/4 cup finely chopped onion
2 cloves garlic, minced
2 tablespoons lime juice
1/2 teaspoon hot sauce, such as Tabasco, or more to taste
1/4 teaspoon salt
PREPARATION
1. Preheat oven to 450°
2. Cube zucchini, toss with grapeseed oil and place on a parchment lined baking sheet. Roast for 20-25 minutes
3. Drain in a sieve, pressing lightly on the zucchini to extract any liquid.
3. Transfer the zucchini to a large bowl and add avocado, cilantro, onion, garlic, lime juice, hot sauce and salt.
4. Coarsely mash until combined.
