- 1 lb. sea bass
- 2 T. Sherry Vinegar
- 1/2 C. orange juice
- 12 cherry tomatoes
- 2 leeks-julienne
- 1 head fennel-julienne
- 2 T. grape seed oil
- salt and pepper to taste
- Sear the sea bass with pan spray. Set aside.
- Add all the ingredients to a small saucepan and cook until caramelized.
- Serve over pasta, quinoa or with sautéed vegetables.
