It’s that time of year again… long summer nights, warm summer days and the celebration of July 4, 1776!
It’s a time where friends and family gather together and cook up our favorite summer recipes as we celebrate our country’s independence with good food, good company and hopefully great fireworks. Often times the 4th of July staples include not-the-healthiest of options like hamburgers, mayonnaise-y potato salads and potato chips. But does 4th of July really have to = unhealthy in order to taste good? Absolutely not! If you are on the hunt for a healthy BBQ this coming Monday, I whipped up my version of the perfect, healthy 4th of July Recipe— Chipotle Lime Glazed Salmon Kabob with Grilled Corn.
-Salmon Kabobs-
16 Oz. Wild Salmon, Cut into 1″ Cubes
1 Whole Yellow Bell Pepper Cut into 1″ Cubes
1/2 White Onion Cut into 1″ Cubes
4 12″ Bamboo Skewers
2 Tbs. Olive Oil
4 Ears Sweet Corn
-Chipotle Lime Glaze-
1/2 C. G Hugh’s GF Sugar Free BBQ Sauce ( or bbq sauce of preference)
1 Tbs. Chipotle Pepper
1 Tbs. Fresh Lime
Directions
For Kabobs
Coat salmon kabobs components in olive oil and assemble on skewers. 4 Salmon Cubes per Skewers
For Glaze
Whisk bbq sauce, lime and chipotle together
BBQ kabobs and corn in husk over medium high. Brush kabobs with glaze as they cook.
Serve with your favorite, heathy 4th of July sides!
