Bulgar is a great example of trying something new, having great taste and nutrition. Bulgar is often used in Middle Eastern cuisine. It has a light nutty flavor. Which is great to use in soups and baking. You can also use bulgar as a substitute for rice. It is a complete protein that is high fiber (double bonus!).

INGREDIENTS
1 cup fine bulgar (burghul crushed wheat)
1/2 cup finely chopped mint
1 1/2 cups finely chopped parsley
1 cup finely chopped onions
3/4 cup chopped tomatoes
3/4 cup olive oil
1 cup lemon juice
Sea Salt and pepper
PREPARATION
– Soak bulgar for one hour in warm water (this helps soften the grains)
– Drain and press out excess water
– Mix bulgar with all other ingredients
– Feel free to add more lemon juice if you want added flavor
– Serve on lettuce leaves or cabbage leaves
